Lime Cookies (for St. Patrick’s Day)

¾ cup shortening, butter, or margarine,

1 cup white sugar,

1 pkg (3 oz) lime flavored Jell-O,

2 eggs

2½ cups all-purpose flour

1 tsp baking powder

1 tsp salt

green sugar sprinkles

  1. Preheat oven to 350°F. Mix thoroughly shortening, sugar, gelatin, and eggs. Blend in dry ingredients.

  2. Roll dough into ¾-inch balls. Place 3 inches apart on ungreased cookie sheet. Flatten each with the bottom of a glass dipped in the green sugar.

  3. Bake for 8 minutes.

    oh fun! I totally forgot about these for St. Patty’s Day. growing up, we made jello cookies and I make them for my kids as well using usually red jello (it’s generally my favorite). but what a fun spin for the upcoming holiday! thanks, Hannah!!

    Tara, you’re the one who first introduced me to Jello cookies. They’re fun because they can fit almost any holiday. Just change out the color of the Jello.

    Stacy, thanks for stopping by, and I know some people absolutely hate shortening. As a high altitude gal, I lean on it more than I probably should.
